  • When buying fish, let the boss kill the fish, slice it into fish fillets, take it home and clean it.

  • Put the cleaned fish in a large bowl, add some salt, 1g white pepper, 10g cooking wine, 1 egg white, 20g starch, grab it by hand and marinate for 10 minutes.

  • 20g of green Sichuan peppercorn is mashed with Marble Mortar & Pestle, 30 g of garlic was crushed with Oye Stainless Steel Garlic Press, and then 3 green peppers, 2 millet spicy, 20 g of ginger were all washed and chopped with a knife.

  • Wash the remaining 40g of green Sichuan peppercorn for use, and wash the remaining 3 green peppers and 2 millet spicy cut as a circle.

  • Put the right amount of oil in the Chinese wok, add the mashed green Sichuan peppercorn and saute.

  • Put the chopped millet spicy, green pepper, ginger, and minced garlic into the Chinese wok, then add 20g of green pepper and saute together.

  • After the water is boiled, add a proper amount of salt and 10 g of Seasoned Soy Sauce and mix thoroughly. Then add the fish bones and fish head.

Cooking Tips

  2. I recently watched a documentary cooking show that featured the green Sichuan peppercorn. I believe it was used in preparing crab, but the idea was incredibly intriguing to me. The way the flavor was described had my mouth watering and looking for a way to try it out. I really like the look of this dish.   6. Looks and sounds like a great fish dish. I will have to try it out as I don’t recall eating green peppercorn before. The term millet pepper is new to me. So I had to look it up. It still is not clear to me what a millet pepper is. I grow Thai chili peppers in a pot at home. We actually have several varieties growing in our flower bed as well. I found tien tsin pepper images and description online, which appear to be millet peppers. Is chicken stock a suitable for chicken powder? We use chicken stock in many of our dishes at home.

  10. I was a little worried about taking on a Sichuan recipe but the instructions you have provided here are really quite simple to follow, for a newbie cook like myself! 

    I have checked through the kitchen and I actually already have about 75% of the ingredients needed, I’m wondering where the best place to buy the rest online would be? (preferably the cheapest place!).

Generally speaking, buying online is the cheapest, but it needs some time, and Some ingredients can’t buy online. Maybe you can find them in the Asian store in your area, I don’t think you would pay much more.

  13. The look of the dish itself says a lot. Looks like a very delicious one. I like how you have included the step by step methods including photos for the ingredients. Thankfully, the ingredients are easily available in the market, including the Chinese shops.

    Though the steps look many, I am surprised that the cooking time is not that long.I believe I can still use a normal pan if I can’t access the Chinese Wok? Thank you for this great recipe. Will sure give it a try and see who to surprise.

  14. This sounds awesome and something I am definitely going to try and cook for myself. I do most of the cooking at home mainly because I like to cook and try new recipes, many which I create on my own from just trying new ingredients. Rarely have I made something that didn’t come out good.

    Your recipe guidelines for making the Sichuan peppercorn fish is very easy to follow and has already given me some ideas of added ingredients I may try, but first I must taste the original recipe to be sure. I was thinking that maybe I could add a little Lemon Grass and some yellow or green curry. What do you think about those added ingredients?

      Generally speaking, it is not recommended to change the ingredients, because this is the taste of Sichuan, mainly the smell of hemp.
      Of course, if you like, you can adjust the ingredients according to your favorite style.

    I remember my mom used to put a bit of pepper in any dishes she made only to raise our appetite since my sisters and myself got very unchained when we were at the dinner table. Your article mentioned “green Sichuan peppercorn” is also something my mom uses for dinner too, but not that often. It does help to bring out the flavor with other ingredients for the same dish if I wasn’t wrong!

     I see you use the Chinese Wok for this dish, is it a necessity or we could use a normal pan for this too? It will be nice an expert like you could answer my question.

      I guess your mother is also a good cook, she can cook very delicious dishes for her family.

      When making this dish in your own home, use the ready-made kitchen utensils in the kitchen as much as possible, so you don’t have to use Chinese Wok, just use normal pan.

  18. This is not bad at all and the Sichuan peppercorn fish isn’t a bad idea at all. Some of this ingredients, I use at home and those I don’t have, I can easily grab at a Chinese local grocery store around here. The cooking time isn’t so bad and I have heard about the sichuanese and think I should try it out too. Thanks for the step by step guide. Cheers
