  • Put the cleaned fish in a large bowl, add some salt, 1g white pepper, 10g cooking wine, 1 egg white, 20g starch, grab it by hand and marinate for 10 minutes.

  • Wash the remaining 40g of green Sichuan peppercorn for use, and wash the remaining 3 green peppers and 2 millet spicy cut as a circle.

  6. Looks and sounds like a great fish dish. I will have to try it out as I don’t recall eating green peppercorn before. The term millet pepper is new to me. So I had to look it up. It still is not clear to me what a millet pepper is. I grow Thai chili peppers in a pot at home. We actually have several varieties growing in our flower bed as well. I found tien tsin pepper images and description online, which appear to be millet peppers. Is chicken stock a suitable for chicken powder? We use chicken stock in many of our dishes at home.

    Your recipe guidelines for making the Sichuan peppercorn fish is very easy to follow and has already given me some ideas of added ingredients I may try, but first I must taste the original recipe to be sure. I was thinking that maybe I could add a little Lemon Grass and some yellow or green curry. What do you think about those added ingredients?

      Generally speaking, it is not recommended to change the ingredients, because this is the taste of Sichuan, mainly the smell of hemp.

    I remember my mom used to put a bit of pepper in any dishes she made only to raise our appetite since my sisters and myself got very unchained when we were at the dinner table. Your article mentioned “green Sichuan peppercorn” is also something my mom uses for dinner too, but not that often. It does help to bring out the flavor with other ingredients for the same dish if I wasn’t wrong!

     I see you use the Chinese Wok for this dish, is it a necessity or we could use a normal pan for this too? It will be nice an expert like you could answer my question.

      When making this dish in your own home, use the ready-made kitchen utensils in the kitchen as much as possible, so you don’t have to use Chinese Wok, just use normal pan.

Some of this ingredients, I use at home and those I don’t have, I can easily grab at a Chinese local grocery store around here.
