Wash the chicken claws and cut into half
Put the chicken claws into the pot, add cold water, some ginger slices, cooking wine, salt. Cooking for about 20 minutes. If you like to eat the softer ones or the harder ones, you can adjust the time appropriately. For example, if you like the softer one, cooking for some time more.
During cooking the chicken claws, let’s prepare other ingredients. Washing red pepper, line pepper, garlic, lemon, and cut into pieces.
Wash the cooked claws with water. After washing, you can soak them in ice water for a while to make the claws more palatable. If there is no ice water, you can soak them in water and put into the refrigerator for a while. Then add ingredients: Peppercorn, salt, sugar, chopped red pepper, hopped line pepper, chopped garlic, soy sauce, Dark Soy Sauce, white vinegar, lemon slices, and water.
Cover with plastic wrap and put it in the refrigerator for a few hours.
